Corn Ribs
- 4 ears corn (husks removed)
- 1½ tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Honey-Butter Glaze
- 3 tbsp butter (melted)
- 2 tbsp honey
- ½ tsp chili flakes (adjust to taste)
- Zest + juice of ½ lime
- Pinch of salt
To Finish
- Crumbled cotija cheese
- Fresh cilantro (finely chopped, optional)
Instructions
- Prepare the Corn Ribs: Remove the husks from the ears of corn and carefully cut each ear into quarters lengthwise, creating corn ‘ribs’.
- Season the Corn: Toss the corn ribs in olive oil, salt, and black pepper, ensuring they are evenly coated for a flavorful base.
- Air Fry the Corn Ribs: Preheat your air fryer to 400°F (205°C). Place the corn ribs in a single layer in the basket and air fry for about 10 minutes, turning halfway through, until they are tender and slightly charred.
- Make and Apply the Honey-Butter Glaze: While the corn cooks, whisk together melted butter, honey, chili flakes, lime zest and juice, and a pinch of salt. After air frying, immediately brush the glaze generously over the hot corn ribs, then sprinkle crumbled cotija cheese and chopped cilantro on top. Serve warm.
