The corn is cut into ribs, seasoned, air fried to perfection, and then coated with a flavorful honey-butter glaze with a hint of chili and lime. Corn Ribs

  • 4 ears corn (husks removed)
  • 1½ tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Honey-Butter Glaze

  • 3 tbsp butter (melted)
  • 2 tbsp honey
  • ½ tsp chili flakes (adjust to taste)
  • Zest + juice of ½ lime
  • Pinch of salt

To Finish

  • Crumbled cotija cheese
  • Fresh cilantro (finely chopped, optional)


Instructions

  1. Prepare the Corn Ribs: Remove the husks from the ears of corn and carefully cut each ear into quarters lengthwise, creating corn ‘ribs’.
  2. Season the Corn: Toss the corn ribs in olive oil, salt, and black pepper, ensuring they are evenly coated for a flavorful base.
  3. Air Fry the Corn Ribs: Preheat your air fryer to 400°F (205°C). Place the corn ribs in a single layer in the basket and air fry for about 10 minutes, turning halfway through, until they are tender and slightly charred.
  4. Make and Apply the Honey-Butter Glaze: While the corn cooks, whisk together melted butter, honey, chili flakes, lime zest and juice, and a pinch of salt. After air frying, immediately brush the glaze generously over the hot corn ribs, then sprinkle crumbled cotija cheese and chopped cilantro on top. Serve warm.
