- Whip Cream: While pudding thickens, combine ½ cup of heavy whipping cream with the powdered sugar. Whip on medium-high speed until stiff peaks form, then gently fold the whipped cream into the thickened pudding mixture for a light and creamy filling.
- Chill Pudding Filling: Transfer the pudding mixture into a piping bag or a Ziploc bag with one corner snipped off. Refrigerate to keep it firm and ready for assembly.
- Make Chocolate Ganache: Place the chocolate chips and remaining ½ cup heavy whipping cream in a microwave-safe bowl. Heat in the microwave for 45 seconds until the cream is hot but not boiling.
- Mix Ganache: Stir the heated cream and chocolate chips with a rubber spatula until smooth and glossy. Transfer this mixture into another piping or Ziploc bag for easy topping.
- Prepare Nilla Wafers: Arrange half of the Nilla Wafers on a baking sheet lined with parchment paper or silicone baking mat, with their flat sides facing up.
