- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1 cup spinach, roughly chopped
- 8 ounces Boursin cheese (any flavor)
- 3 cups chicken broth
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the orzo bake later.
- Cook Chicken: In a large, oven-safe skillet or baking dish, heat olive oil over medium heat. Add chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until chicken is browned and fully cooked.
- Sauté Vegetables: Add broccoli florets, cherry tomatoes, and chopped spinach to the skillet with chicken. Stir and cook for another 2-3 minutes until the vegetables are just tender.
- Add Broth and Bring to Boil: Pour in the chicken broth and bring the mixture to a gentle boil on the stovetop.
- Add Orzo and Boursin Cheese: Stir in the orzo pasta, then add dollops of Boursin cheese. Gently mix until the cheese is mostly melted and incorporated evenly throughout the skillet.
- Add Mozzarella Cheese: Remove the skillet from heat and evenly sprinkle shredded mozzarella cheese over the top of the pasta mixture.
- Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese on top is bubbly and golden brown.
- Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley before serving.
