Description

A savory and satisfying Breakfast Pizza featuring a crispy prepared pizza crust topped with fluffy eggs, flavorful sausage or bacon, fresh vegetables, and a blend of melted cheeses. Perfect for a hearty morning meal or brunch occasion.

Ingredients

Scale

Crust and Base

  • 1 can prepared pizza crust
  • 2 tablespoons olive oil, divided
  • ½ teaspoon dried basil

Egg Mixture

  • 6 eggs
  • 3 tablespoons milk
  • salt and black pepper to taste

Toppings

  • 8 ounces ground pork sausage, cooked and drained (or ¼ cup cooked and crumbled bacon)
  • 3 green onions, sliced and divided
  • ¼ cup finely diced red bell pepper
  • 8 ounces Cabot Pepper Jack Cheese, shredded
  • 2 ounces Cabot Extra Sharp Cheddar Cheese, shredded
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (218°C) to prepare for baking the pizza.
  2. Prepare the Pizza Crust: Grease a 10×15-inch rimmed baking sheet with 1 tablespoon of olive oil. Press the prepared pizza dough evenly onto the pan. Brush the top with the remaining 1 tablespoon olive oil and sprinkle with dried basil. Bake in the preheated oven for 7-8 minutes or until the crust is lightly browned.
  3. Cook the Eggs: While the crust bakes, whisk together 6 eggs, 3 tablespoons milk, salt, and black pepper. Heat a lightly oiled skillet over medium heat and cook the egg mixture just until set, about 3-4 minutes, ensuring the eggs remain glossy and slightly undercooked as they will finish cooking in the oven.
  4. Add Toppings: Spread the cooked eggs over the partially baked pizza crust. Top evenly with cooked and drained sausage or crumbled bacon, half of the sliced green onions, diced red bell pepper, and the shredded Pepper Jack and Extra Sharp Cheddar cheeses.
  5. Bake the Pizza: Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheeses have melted thoroughly. For a golden top, broil the pizza for 1-2 minutes, watching carefully to avoid burning.
  6. Finish and Serve: Remove the pizza from the oven and sprinkle with the remaining sliced green onions and chopped fresh parsley if desired. Allow the pizza to rest for 2-3 minutes before slicing and serving.

Notes

  • You can substitute ground pork sausage with crumbled bacon for a different flavor profile.
  • Broiling is optional but recommended for a nicely browned cheese topping.
  • This pizza is best served fresh but can be stored in the refrigerator for up to 2 days.
  • To reheat, warm in a 350°F oven for 5-7 minutes to maintain crispiness.
  • Feel free to add other vegetables such as mushrooms or spinach to customize your breakfast pizza.
