Ingredients
Scale
Chicken and Seasoning
- 1 lb. chicken breasts or tenders, cut into bite-sized pieces
- 1 Tbsp avocado oil or olive oil
- Sea salt, about 1/4 teaspoon
- Ground black pepper, about 1/4 teaspoon
Toppings and Flavorings
- 6 ripe Roma tomatoes, chopped and lightly sprinkled with sea salt
- 3 fresh garlic cloves, crushed or chopped
- 1 cup shredded mozzarella cheese
- 1 tsp dried oregano
- 2 Tbsps high-quality balsamic vinegar
- A small handful of fresh basil leaves, chopped
- Cooking spray (for greasing the baking dish)
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to ensure it is ready for baking the casserole.
- Cook Chicken: Heat the avocado or olive oil in a skillet over medium-high heat. Add the bite-sized chicken pieces and season them with sea salt and black pepper. Cook the chicken until it turns golden brown and is almost fully cooked through, ensuring it remains juicy inside.
- Assemble Casserole: Lightly spray an 8×8 baking dish with cooking spray. Transfer the cooked chicken evenly into the dish. Top the chicken with the chopped Roma tomatoes, sprinkle the dried oregano and crushed garlic evenly, and drizzle the balsamic vinegar on top. Finally, spread the shredded mozzarella cheese over the entire surface.
- Bake: Place the assembled casserole in the preheated oven. Bake for 18 to 20 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
- Rest and Serve: Remove the casserole from the oven and cover it lightly. Allow it to rest for 5 minutes to let the flavors meld and keep the chicken moist. Garnish with freshly chopped basil before serving to enhance freshness and aroma.
Notes
- You can substitute avocado oil with olive oil or any other neutral cooking oil.
- For a spicier version, add a pinch of red pepper flakes with the oregano and garlic.
- Use fresh mozzarella for a creamier melt, if preferred.
- Serve with a side salad or crusty bread for a more complete meal.
- Make sure the chicken is cooked through in the skillet to avoid undercooked chicken after baking.
