Cauliflower Mixture

  • 4 cups cauliflower florets (340g)
  • 1 1/2 tsp baking powder
  • 1/3 cup flour (40g) (spelt, white, oat, gluten free all purpose, sorghum, or almond flour)
  • 1 tsp dried oregano (optional)
  • 1/4 tsp garlic powder
  • 1/2 tsp salt

  • 1/4 cup fine breadcrumbs (30g) or almond flour


Instructions

  1. Prepare the baking sheet or air fryer: Line a baking sheet with parchment paper or grease your air fryer tray to prevent sticking.
  2. Steam the cauliflower: Steam the cauliflower florets until they become fall-apart soft, then drain thoroughly and set aside to cool.
  3. Preheat heat source: Preheat your oven to 425°F (218°C) or heat your air fryer to the closest temperature available to this.
  4. Mix dry ingredients: In a small bowl, combine baking powder, garlic powder, salt, flour, and optional dried oregano thoroughly.
  5. Remove excess moisture: Place cooled cauliflower in a clean dish towel or cheesecloth over a sink or bowl, and squeeze out as much liquid as possible to prevent sogginess.
  6. Mash cauliflower and combine: Mash the cauliflower with a fork or potato masher until smooth. Stir in the dry spice mixture, adding a little water slowly if the mixture feels too dry.
  7. Shape the tots: Using your hands, press the mixture into traditional tater tot shapes. Roll each tot in fine breadcrumbs or almond flour for a crispy coating.
  8. Cook the tots: Arrange the formed tots on the prepared baking sheet or air fryer basket. Bake in the oven for 25 minutes, or air fry for 10 minutes, shaking halfway through, until golden brown and crispy.
