Description

These Cheesy Garlic Herb Roasted Potatoes are a delicious and easy side dish featuring tender baby potatoes tossed with fragrant herbs and garlic, roasted to golden perfection, and topped with melted mozzarella and Parmesan cheese. Crispy on the outside and soft on the inside, they make a perfect complement to any meal.

Ingredients

Scale

Potatoes and Herbs

  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Cheese Topping

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Season Potatoes: In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, dried thyme, dried rosemary, dried parsley, salt, and pepper. Toss everything thoroughly until the potatoes are evenly coated with the mixture.
  3. Arrange Potatoes: Spread the seasoned potatoes evenly on the prepared baking sheet, placing them cut side down to help them get extra crispy.
  4. Roast Potatoes: Roast the potatoes in the preheated oven for 25 to 30 minutes, or until they are golden brown on the outside and tender when pierced with a fork.
  5. Add Cheese: Remove the baking sheet from the oven and sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the roasted potatoes.
  6. Melt Cheese: Return the potatoes to the oven and roast for an additional 5 to 7 minutes until the cheese has melted completely and is bubbly and lightly golden.
  7. Garnish and Serve: Once done, garnish the cheesy roasted potatoes with freshly chopped parsley and serve them hot for the best flavor and texture.

Notes

  • You can use any variety of baby potatoes such as red, Yukon gold, or fingerling for slightly different flavors and textures.
  • For a spicier kick, add a pinch of red pepper flakes to the seasoning mix.
  • Make sure the potatoes are evenly coated in oil and herbs to maximize flavor and crispiness.
  • Feel free to substitute mozzarella with other melting cheeses like cheddar or Monterey Jack if preferred.
  • This dish pairs wonderfully with grilled meats, roasted chicken, or as part of a vegetarian meal.
