Ingredients
Scale
Chicken and Seasoning
- 2 large chicken breasts, sliced into strips
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Vegetables
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
Other
- 2 cups cooked white rice
- 1/2 cup shredded cheddar cheese
- 1/2 cup fresh salsa
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Season the Chicken: In a large bowl, toss the chicken strips with olive oil, chili powder, cumin, smoked paprika, salt, and black pepper until they are evenly coated with the spices.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 5-6 minutes, stirring occasionally, until the chicken is fully cooked through and slightly browned. Remove the chicken from the skillet and set it aside.
- Sauté the Vegetables: In the same skillet, add the sliced red and yellow bell peppers along with the sliced onion. Sauté for 5-7 minutes until the vegetables are tender and have a slight char, adding extra flavor.
- Assemble the Bowls: Divide the cooked white rice evenly among four bowls. Top each bowl with the cooked chicken strips and sautéed vegetables. Sprinkle shredded cheddar cheese over the top and add fresh salsa.
- Garnish and Serve: Finish each bowl by garnishing with chopped cilantro and a squeeze of fresh lime juice. Serve the bowls immediately to enjoy the fresh, flavorful fajita experience.
Notes
- Use chicken thighs instead of breasts for a juicier option.
- Substitute white rice with brown rice or quinoa for a healthier grain.
- Add avocado slices or sour cream for extra creaminess.
- Adjust the chili powder amount to control the heat level.
- For a vegetarian version, replace chicken with sautéed mushrooms or tofu.
