Ingredients
Scale
Chicken and Marinade
- 1 1/2 lbs boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and black pepper, to taste
Toppings and Serving
- 12 small corn tortillas
- Fresh cilantro, chopped, for topping
- Diced onion, for topping
- Lime wedges, for serving
Instructions
- Prepare the marinade: In a medium bowl, whisk together olive oil, fresh lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper until well combined. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and let marinate for at least 30 minutes to absorb the flavors.
- Cook the chicken: Heat a large skillet over medium-high heat. Remove chicken from marinade and cook for about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C), ensuring the chicken is cooked through and slightly charred on the outside for flavor.
- Rest and slice the chicken: Remove the cooked chicken from the skillet and let it rest on a cutting board for 5 minutes. This allows the juices to redistribute. Then slice the chicken thinly into strips for the tacos.
- Warm the tortillas: Using the same skillet, warm the corn tortillas for about 30 seconds on each side until they are pliable and slightly toasted. This helps enhance their flavor and makes them easier to fold.
- Assemble the tacos: Place slices of the cooked chicken onto each warm tortilla. Top with fresh diced onions and chopped cilantro for a classic Mexican street taco flavor. Serve immediately with lime wedges on the side for an extra burst of citrus.
Notes
- For extra heat, add a sprinkle of chili flakes or hot sauce to the tacos.
- You can substitute chicken breasts with thighs for a juicier option.
- Consider serving with a side of salsa or guacamole for more authentic flavor.
- To keep tortillas warm longer, wrap them in a clean kitchen towel after warming.
- Make sure not to overcrowd the skillet when cooking chicken to ensure even cooking and browning.
