- 1 pound chicken breast, cut into small cubes
- 1 small onion, diced
- 1 small red bell pepper, diced
Seasoning & Cheese
- 1 (1-ounce) packet taco seasoning or fajita seasoning
- 2 cups shredded Monterey jack cheese or any cheese blend

- 4 large flour tortillas
- 2 tablespoons olive oil (divided)
Instructions
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken cubes in a single layer. Cook for about 2 minutes on each side until the chicken is fully cooked through. Once done, remove the chicken from the skillet and set aside on a plate.
- Sauté the Vegetables: Add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onion and red bell pepper, cooking for 2 to 3 minutes until they soften and become fragrant.
- Combine Chicken and Seasoning: Return the cooked chicken to the skillet along with the packet of taco seasoning. Stir well to combine all the flavors evenly, then remove the skillet from heat and set aside.
- Assemble the Quesadillas: Lay out the flour tortillas on a clean surface. Brush one side of each tortilla with olive oil, then place them oil-side down. Spread a quarter of the chicken and vegetable mixture evenly over one half of each tortilla, and sprinkle ½ cup of shredded cheese on top of the mixture. Fold the tortilla over to cover the filling.
- Cook the Quesadillas: Heat a nonstick pan over medium-low heat. Place each folded quesadilla in the pan and cook for 3 to 4 minutes on each side until the tortilla turns golden brown and crispy, and the cheese inside melts fully. Remove from heat and serve warm.

- You can substitute Monterey jack cheese with cheddar, pepper jack, or a Mexican cheese blend for variation.
- For extra flavor, garnish quesadillas with fresh cilantro, sour cream, or guacamole before serving.
