Ingredients
Scale
Chicken Topping
- 1/2 pound boneless skinless chicken breasts, cubed
- 1 packet (1 ounce) taco seasoning mix
- 1/2 cup ranch dressing
Base & Toppings
- 1 recipe homemade pizza dough OR 1 store-bought large flatbread pizza crust
- 1 can (16 ounces) refried beans
- 2 to 3 cups shredded cheddar cheese (or a blend of Colby and Monterey Jack cheese)
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
Instructions
- Prepare Dough: Prepare the pizza dough according to the recipe or package directions. Let the dough rest for at least 10 minutes while covered. Press the dough out onto a large pizza pan. If using a store-bought flatbread pizza crust, simply remove from packaging and place it on a pizza stone or large pizza pan.
- Preheat Oven: Preheat your oven to 450 degrees Fahrenheit to ensure a hot environment for baking the pizza.
- Cook Chicken: Heat a large non-stick skillet over medium-high heat and cook the cubed chicken for about 10 minutes until no longer pink inside. Stir in the taco seasoning and ranch dressing, cooking for an additional 5 to 8 minutes until well combined and heated through. Remove from heat and let the mixture rest.
- Prepare Bean Spread: Transfer the refried beans to a microwave-safe bowl and heat for 1 minute. Stir thoroughly, then spread the beans evenly over the pizza crust to create a flavorful base layer.
- Assemble Pizza: Top the bean-spread crust with the cooked chicken mixture, sprinkle generously with shredded cheese, then evenly distribute chopped tomatoes, black olives, and green onions across the pizza.
- Bake Pizza: Place the assembled pizza in the preheated oven and bake for 12 to 15 minutes, or until the cheese is melted and bubbly. Carefully remove the pizza from the oven and let it rest for 5 minutes before slicing.
- Serve & Store: Slice and serve the pizza warm. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
Notes
- You can substitute the store-bought crust for homemade dough for a fresher result.
- Adjust the amount of taco seasoning and ranch dressing to taste for spicier or creamier toppings.
- Use a pizza stone if available to achieve a crisper crust.
- Leftover pizza is best reheated in an oven or toaster oven to maintain crispness.
- Feel free to add other taco toppings like jalapeños or cilantro for extra flavor.
