Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 1-minute increments, stirring after each, until the mixture is completely melted and smooth. Set aside to cool slightly.
  2. Toast Almonds and Coconut: Heat a large skillet over medium heat. Add the slivered almonds and coconut flakes. Toast, stirring frequently, until golden brown and fragrant. Remove from heat and set aside to cool.
  3. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper, ensuring enough overhang for easy removal of the bars later.
  4. Layer Berries and Toppings: Place the chopped strawberries, blueberries, and raspberries in layers inside the loaf pan. Evenly sprinkle the toasted almonds, coconut flakes, and chia seeds over the berries.
  5. Drizzle Chocolate: Pour the melted chocolate mixture evenly over the layered berries and toppings. Tap the loaf pan gently on the counter several times to help settle the ingredients and remove any air pockets.
  6. Freeze Bars: Place the loaf pan in the freezer and freeze for about 7 hours, or until the bars are fully set and firm.
