Glaze

  • 6 ounces dark chocolate
  • 1 cup cream
  • 1 teaspoon Cointreau (optional)

Instructions

  1. Prepare the Oranges: Place the oranges in a saucepan with cold water and bring to a boil. Reduce heat and simmer for 2 hours until the oranges are soft. Drain and let them cool.
  2. Remove Seeds: Once cool, cut the oranges in half and remove any large seeds carefully to avoid bitter flavors.
  3. Preheat Oven: Preheat the oven to 350°F (175°C) and grease an 8-inch springform pan to prevent sticking.
  4. Make the Cake Batter: In a food processor, pulse the cooled oranges until pulpy. Add the eggs, baking powder, baking soda, ground almonds, sugar, and cocoa powder. Process until smooth, but still flecked with orange pieces for texture.
  5. Bake the Cake: Pour the batter into the prepared pan and bake for about 1 hour. Check at 45 minutes and cover with foil if it starts to brown too quickly. The cake is done when a toothpick inserted comes out clean.
  6. Prepare the Glaze: Chop the dark chocolate and place it in a bowl. Heat the cream in a saucepan until almost boiling, then pour it over the chocolate. Let it sit for 5 minutes, then stir until smooth and glossy.
