Dressing

  • 1/2 cup mayonnaise (or Greek yogurt for lighter version)
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add the elbow macaroni, and cook until al dente, about 8-10 minutes. Drain the pasta and rinse under cold water to cool and stop the cooking process.
  2. Prepare the vegetables and herbs: While the pasta cooks, dice the red bell pepper, chop the green onions, and either finely chop fresh dill or measure the dried dill.
  3. Mash the avocado: In a medium bowl, mash the ripe avocado until smooth but leave some small chunks to add texture to the salad.
  4. Make the dressing: In a separate bowl, whisk together mayonnaise (or Greek yogurt) and apple cider vinegar until smooth. Season with salt and pepper to taste.
  5. Combine salad ingredients: In a large mixing bowl, combine the cooled pasta with the diced vegetables, herbs, and mashed avocado. Pour the prepared dressing over the mixture and gently fold to combine all ingredients evenly.
