Ingredients
Scale
Pasta
- 2 cups elbow macaroni
Vegetables & Herbs
- 1 ripe avocado
- 2 tbsp fresh dill (or 1 tbsp dried dill)
- 1 cup red bell pepper, diced
- 1/2 cup green onions, chopped
Dressing
- 1/2 cup mayonnaise (or Greek yogurt for lighter version)
- 2 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil, add the elbow macaroni, and cook until al dente, about 8-10 minutes. Drain the pasta and rinse under cold water to cool and stop the cooking process.
- Prepare the vegetables and herbs: While the pasta cooks, dice the red bell pepper, chop the green onions, and either finely chop fresh dill or measure the dried dill.
- Mash the avocado: In a medium bowl, mash the ripe avocado until smooth but leave some small chunks to add texture to the salad.
- Make the dressing: In a separate bowl, whisk together mayonnaise (or Greek yogurt) and apple cider vinegar until smooth. Season with salt and pepper to taste.
- Combine salad ingredients: In a large mixing bowl, combine the cooled pasta with the diced vegetables, herbs, and mashed avocado. Pour the prepared dressing over the mixture and gently fold to combine all ingredients evenly.
- Chill the salad: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and develop before serving.
Notes
- Using Greek yogurt instead of mayonnaise reduces calories and adds a tangy flavor.
- Make sure the pasta is cooled completely before mixing to avoid wilting the avocado and vegetables.
- Adjust dill quantity based on preference for a stronger or milder herb taste.
- For extra crunch, consider adding celery or cucumber.
- Salt and pepper can be adjusted at the end after chilling to suit taste.
