Description

These Decadent Strawberry Cheesecake Quesadillas are a quick and delightful dessert or snack, combining creamy strawberry-infused cream cheese with warm, crispy tortillas. Perfectly golden and lightly dusted with cinnamon sugar, they pair wonderfully with a side of sweet strawberry sauce for dipping.

Ingredients

Scale

Cheesecake Filling

  • 1/2 cup cream cheese, softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup strawberries, diced

Quesadillas

  • 4 tortillas, 6-inch
  • 2 tbsp butter, softened
  • 1 tsp sugar
  • 1/2 tsp cinnamon

Serving

  • Strawberry sauce for dipping

Instructions

  1. Prepare the cream cheese mixture: In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries to distribute them evenly without breaking them down.
  2. Assemble first tortilla: Spread half of the strawberry cream cheese mixture evenly onto one tortilla, covering it completely.
  3. Heat the pan and add butter: Heat 1 teaspoon of butter in a skillet or pan over medium-high heat until melted and hot.
  4. Cook the assembled tortilla: Place the tortilla with the cream cheese mixture side up in the pan carefully so it doesn’t spill out.
  5. Top with the second tortilla: Spread 1 teaspoon of butter on one side of a second tortilla and place it butter side up on top of the first tortilla to form a quesadilla.
  6. Cook until golden: Cook each side of the quesadilla for 2-3 minutes or until the tortillas are golden brown and crispy, flipping carefully with a spatula.
  7. Add cinnamon sugar topping: Mix the sugar and cinnamon together and sprinkle generously on top of the cooked quesadilla for extra sweetness and flavor.
  8. Repeat for second quesadilla: Repeat the assembly and cooking process with the remaining ingredients to make a second quesadilla.
  9. Rest and serve: Let the quesadillas sit for 2 minutes after cooking to set, then slice into wedges and serve warm with strawberry sauce for dipping.

Notes

  • Use softened cream cheese for easier mixing and a smoother filling.
  • Fresh ripe strawberries give the best flavor, but frozen thawed strawberries can be used in a pinch. Just drain excess juices.
  • Adjust sugar amount in the cream cheese filling or topping to your taste preference.
  • Cooking on medium-high heat helps get a crispy exterior without burning the tortillas.
  • Serve immediately for best texture; quesadillas can become soggy if left too long.
