Ingredients
Scale
Chicken
- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
Sauce
- 1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 3/4 cup heavy cream
- 1/2 cup chicken broth
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Season the chicken: Season both sides of the chicken breasts with salt and pepper to enhance flavor.
- Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4 to 5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
- Sauté mushrooms: Reduce heat to medium and add butter to the skillet. Once melted, add the sliced mushrooms and cook until they are browned and tender, about 5 to 7 minutes.
- Add garlic: Stir in minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Deglaze the pan: Pour in the chicken broth and use a spoon to scrape up any browned bits stuck to the bottom of the skillet. Let it simmer for 2 to 3 minutes, allowing the broth to reduce slightly.
- Melt Boursin cheese: Add the Boursin Garlic & Fine Herbs cheese to the skillet and stir continuously until it is fully melted and incorporated into the sauce.
- Add heavy cream: Pour in the heavy cream and let the sauce gently simmer for 3 to 5 minutes until it thickens slightly.
- Return chicken to skillet: Place the seared chicken breasts back into the pan and coat them thoroughly with the sauce. Let the chicken simmer in the sauce for another 5 to 7 minutes, ensuring it is cooked through.
- Garnish and serve: Sprinkle chopped fresh parsley over the dish if desired, and serve hot with your choice of side dishes such as rice, vegetables, or pasta.
Notes
- You can substitute chicken broth with vegetable broth for a slightly different flavor.
- Make sure not to overcook the chicken; internal temperature should reach 165°F (74°C).
- Boursin cheese adds a lot of flavor and creaminess, so no additional thickening agents are needed.
- For a lighter version, you can use half-and-half instead of heavy cream, but the sauce may be less rich.
- This recipe pairs well with steamed vegetables, mashed potatoes, or crusty bread.
