Tomatoes and Vegetables
- 1 can (28 ounces) whole tomatoes with juice
- 2 cans (10 ounces each) Rotel (diced tomatoes with green chilies)
- 1/4 cup chopped onion
- 1 small garlic clove, chopped
- 1 jalapeño pepper, quartered and thinly sliced
- 1/2 cup fresh cilantro (adjust to taste)
Seasonings
- 1/4 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- Juice of half a lime
Instructions
- Combine ingredients: In a blender or food processor, add the whole tomatoes with their juice, Rotel diced tomatoes with green chilies, chopped onion, jalapeño slices, garlic, sugar, salt, cumin, lime juice, and fresh cilantro.
- Pulse to desired consistency: Pulse the mixture 10 to 15 times, depending on how chunky or smooth you prefer your salsa. Stop and check consistency regularly to avoid over-blending.
- Taste and adjust seasoning: Sample the salsa by dipping a tortilla chip into it. Adjust salt, lime juice, or cilantro according to your preference to balance flavor and heat.
- Refrigerate to meld flavors: Transfer the salsa to a sealed container and refrigerate for at least one hour. This chilling step helps the flavors to develop and blend beautifully.
- Serve chilled: Enjoy the salsa chilled as a dip with tortilla chips or use it as a vibrant topping for tacos, grilled meats, or other favorite dishes.
Notes
- Adjust the amount of jalapeño to control the spice level.
- For a smoother salsa, pulse more times or blend longer.
- Storing salsa in the refrigerator overnight enhances the flavor even more.
- Use fresh lime juice for the best citrus flavor.
- This salsa can be stored in an airtight container in the fridge for up to 4 days.
