  • 2 cans (10 ounces each) Rotel (diced tomatoes with green chilies)

  • 1/2 cup fresh cilantro (adjust to taste)

Seasonings

  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • Juice of half a lime


Instructions

  1. Combine ingredients: In a blender or food processor, add the whole tomatoes with their juice, Rotel diced tomatoes with green chilies, chopped onion, jalapeño slices, garlic, sugar, salt, cumin, lime juice, and fresh cilantro.
  2. Pulse to desired consistency: Pulse the mixture 10 to 15 times, depending on how chunky or smooth you prefer your salsa. Stop and check consistency regularly to avoid over-blending.
  3. Taste and adjust seasoning: Sample the salsa by dipping a tortilla chip into it. Adjust salt, lime juice, or cilantro according to your preference to balance flavor and heat.
