Ingredients
Scale
Beef Filling
- 1 lb ground beef or beef strips
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup honey
- 1/3 cup BBQ sauce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Taco Sauce
- 1/2 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon BBQ sauce
- 1/2 teaspoon smoked paprika
Assembly
- 6 soft taco tortillas
- 1 cup shredded cheddar cheese
- Chopped fresh cilantro (optional)
Instructions
- Sauté Garlic in Butter: In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, making sure it does not burn to avoid bitterness.
- Cook the Beef: Add the ground beef or beef strips to the skillet and cook until browned and fully cooked through. Break apart ground beef with a spatula while cooking. Drain excess fat to prevent greasiness.
- Add Honey BBQ Sauce: Stir in the honey, BBQ sauce, smoked paprika, salt, and pepper. Mix well to coat the beef evenly. Let it simmer for 2-3 minutes to meld flavors and thicken the sauce slightly.
- Prepare Taco Sauce: While the beef simmers, combine mayonnaise, honey, BBQ sauce, and smoked paprika in a small bowl. Whisk until smooth and set aside.
- Assemble and Serve: Warm the tortillas in a skillet or microwave until pliable. Spoon the beef mixture onto each tortilla, drizzle with the prepared taco sauce, sprinkle with shredded cheddar cheese, and top with fresh cilantro if desired. Fold and serve immediately.
Notes
- Use lean ground beef to reduce excess fat and grease.
- Adjust the amount of honey in the sauce to tweak sweetness to your preference.
- Fresh cilantro is optional but adds a bright, herbaceous note.
- Soft tortillas work best for folding and holding the fillings.
- Leftover beef mixture can be refrigerated for up to 3 days.
