Instructions
- Cook Eggs: Place the eggs in a saucepan, cover with cold water, and bring to a gentle boil. Once boiling, cover the pan, turn off the heat, and let the eggs sit for 10–12 minutes. Transfer the eggs to an ice bath to cool completely, then peel and chop them.
- Prepare Vegetables and Herbs: Halve the cherry tomatoes, finely dice the red onion, and chop the fresh dill and parsley.
- Make Dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, garlic powder, kosher salt, and black pepper until the dressing is smooth and creamy.
- Combine Salad Ingredients: Add the chopped eggs, cherry tomatoes, red onion, dill, and parsley to the bowl with the dressing. Gently fold everything together until evenly coated.
- Chill Mixture: Refrigerate the egg and tomato mixture for 20–30 minutes if time allows. This helps the flavors meld and the dressing to thicken slightly.
