Marinade & Chicken
- 2 garlic cloves, divided
- 1 lime, juice only
- 2 boneless skinless chicken thighs
- Salt, to taste
- 1 tbsp olive oil (for cooking)
Broth and Aromatics
- 15g fresh ginger, cut into matchsticks
- 1 red chili, finely chopped
- 1 tsp curry powder
- 350ml water
- Fresh coriander and mint, for garnish

- Microwave rice, enough for 2 servings
Instructions
- Marinate chicken: Grate half of the garlic cloves into a bowl and add the lime juice along with salt. Add the chicken thighs and mix well to coat. Refrigerate this mixture for at least 30 minutes to allow the flavors to infuse.
- Prepare ingredients: Slice the remaining garlic cloves thinly. Cut the fresh ginger into thin matchsticks and finely chop the red chili to prepare for the broth.
- Cook chicken: Heat olive oil in a frying pan over medium heat. Add the marinated chicken thighs and cook for 10 to 15 minutes until they develop a nice char and are cooked through. Once cooked, set the chicken aside.
- Make broth: Using the same pan, sauté the sliced garlic, ginger matchsticks, and chopped chili for about 3 minutes until fragrant. Stir in the curry powder, then pour in 350ml of water. Bring to a gentle simmer and let it cook for 5 minutes. Season the broth with a splash of lime juice and salt to taste.
- Serve: Reheat the microwave rice according to package instructions. Divide the rice into serving bowls, ladle the hot broth over the rice, then top with the sliced charred chicken. Garnish with fresh coriander and mint leaves for a refreshing finish.
