Chicken and Marinade
- 2 chicken breasts (about 1 lb / 450 g)
- 2 tablespoons gochujang paste
- 2 tablespoons mayonnaise
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- Salt and pepper, to taste
- 1 tablespoon vegetable oil
Sandwich Assembly
- 4 brioche buns
- 4 lettuce leaves
- ½ cup pickles, sliced
Instructions
- Marinate the Chicken: In a mixing bowl, combine gochujang paste, mayonnaise, honey, minced garlic, grated ginger, salt, and pepper. Mix well to form a smooth marinade. Coat the chicken breasts thoroughly in the marinade and refrigerate for at least 30 minutes to allow the flavors to infuse.
- Cook the Chicken: Heat vegetable oil in a skillet over medium-high heat. Remove the chicken from the marinade (reserve leftover marinade for sauce) and cook for 6-7 minutes on each side, or until the chicken is golden brown and fully cooked through.
- Prepare the Sauce: Pour the leftover marinade into a small saucepan and bring it to a boil over medium heat. Simmer for a few minutes to ensure it’s cooked through and safe to eat, thickening slightly.
- Assemble the Sandwich: Toast the brioche buns lightly until golden. On the bottom half of each bun, layer a leaf of lettuce, the cooked chicken breast, and sliced pickles. Drizzle some of the cooked marinade sauce over the chicken for extra flavor. Top with the other half of the bun and serve immediately.
Notes
- Marinating the chicken for longer (up to 2 hours) will enhance the flavor.
- Make sure to cook the leftover marinade thoroughly before using it as sauce to eliminate any raw chicken bacteria.
- Brioche buns can be substituted with any soft sandwich bun of choice.
