  • 0.5 teaspoon salt

  • 200 grams breakfast sausage, casings removed
  • 100 grams shredded cheddar cheese
  • 120 millilitres salsa, mild or spicy
  • 1 avocado, diced
  • 2 green onions, sliced
  • 2 tablespoons fresh cilantro, chopped (optional)


Instructions

  1. Cook the Hash Browns: Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add thawed hash browns in an even layer, then season with salt and black pepper. Cook undisturbed for 5 to 7 minutes until the bottoms are golden-brown and crisp. Flip carefully and cook for another 4 to 5 minutes to crisp the other side. Transfer hash browns to a plate and keep warm.
  2. Cook the Sausage: Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the breakfast sausage, breaking it up with a spatula as it cooks. Continue cooking until sausage is browned and fully cooked through, about 6 to 8 minutes. Remove sausage from skillet and keep warm.
  3. Scramble the Eggs: In a bowl, whisk together the eggs, whole milk, salt, and black pepper until fully blended. Pour this egg mixture into the same skillet and cook gently over medium heat, stirring frequently to create soft scrambled eggs. Once cooked through but still moist, remove from heat.
  4. Assemble the Bowls: Divide the crispy hash browns evenly among four bowls. Top each with a portion of scrambled eggs and cooked sausage. Sprinkle shredded cheddar cheese on top, then add salsa, diced avocado, sliced green onions, and chopped cilantro if desired.
