- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract

Cinnamon Swirl Topping
- 1/4 cup coconut sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon melted coconut oil
Instructions
- Preheat and Prepare Baking Dish: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish with coconut oil to ensure the oatmeal doesn’t stick during baking.
- Mix Dry Ingredients: In a large bowl, combine the old-fashioned oats, baking powder, ground cinnamon, and salt. Stir well to distribute the baking powder and spices evenly throughout the oats.
- Combine Wet Ingredients: In a separate bowl, whisk together the unsweetened almond milk, maple syrup, beaten egg, vanilla extract, and melted coconut oil until fully blended and smooth.
- Mix Wet and Dry Ingredients: Pour the wet mixture into the dry oatmeal mixture and stir thoroughly until fully combined. Optionally, fold in raisins and chopped nuts to add extra texture and flavor.
- Transfer to Baking Dish: Pour the oatmeal batter into the prepared baking dish, spreading it out evenly.
- Prepare Cinnamon Swirl Topping and Apply: In a small bowl, mix the coconut sugar, ground cinnamon, and melted coconut oil to form the sticky cinnamon swirl. Drizzle this mixture evenly over the oatmeal and use a knife to swirl it gently into the surface for a beautiful effect.
