  • 2 tablespoons olive oil (divided)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook, breaking it apart until browned and cooked through, about 6 to 8 minutes. Transfer the cooked sausage to a plate and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until they are browned. Stir in the fresh spinach and sauté until wilted. Remove the skillet from heat.
