These Lucky Charms Bars combine the nostalgic marshmallow cereal with a gooey, buttery marshmallow mixture to create a fun and colorful treat perfect for parties or a sweet snack. They are easy to make, requiring no baking, and deliver a delightful chewy texture with bursts of marshmallow sweetness in every bite.

Marshmallow Mixture
- 1/3 cup unsalted butter
- 6 cups miniature marshmallows
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Cereal and Topping
- 6 cups Lucky Charms cereal
- 1/2 cup Lucky Charms marshmallows (optional)
Instructions
- Prepare: Generously grease a 9×13-inch pan with cooking spray to prevent sticking and set it aside for later use.
- Make Marshmallow Mixture: In a large nonstick pot over medium-low heat, melt the butter. Lower the heat to low and add 6 cups of miniature marshmallows. Stir continuously with a heat-resistant spatula until completely melted, taking care not to increase the heat to avoid hardening the mixture.
- Finish Mixture: Remove the pot from the heat, then stir in the vanilla extract and salt. Gently fold in the Lucky Charms cereal until evenly coated with the marshmallow mixture. Add the remaining marshmallows and stir just until combined – these extra marshmallows are meant to remain slightly intact and not fully melt.
- Press into Pan: Transfer the mixture to the prepared pan. Using lightly sprayed hands or a spatula, press the mixture evenly into the pan. Sprinkle the optional Lucky Charms marshmallows on top and gently press them into the surface.
- Allow Bars to Set: Let the bars cool at room temperature for about 30 minutes until completely set and firm. Once cooled, use a sharp knife to cut into 16 squares.
Notes
- Use cooking spray on your hands to prevent the sticky marshmallow mixture from adhering while pressing it into the pan.
- Do not increase heat while melting marshmallows; too much heat can cause the bars to become hard.
- The optional marshmallow topping adds extra color and texture but can be skipped if unavailable.
- These bars are best eaten within 2-3 days and can be stored in an airtight container at room temperature.
