Ingredients
Scale
Wet Ingredients
- 1 cup cottage cheese (preferably Good Culture for thicker consistency)
- 1 cup mashed banana (about 2 large very ripe spotted bananas)
- 2 eggs
- 1/3 cup honey
- 2.5 tsp vanilla extract
Dry Ingredients
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 cups Quaker Old Fashioned Oats
- 1/4 tsp salt
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or lining it with muffin liners.
- Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, mashed bananas, eggs, honey, and vanilla extract. Stir until the mixture is well blended and smooth.
- Add Dry Ingredients: Add the baking powder, cinnamon, oats, and salt to the wet mixture. Mix thoroughly until all ingredients are incorporated and a thick batter forms.
- Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
- Bake Muffins: Place the muffin tin in the preheated oven and bake for approximately 25-30 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Cool and Serve: Remove muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- Use very ripe bananas for maximum sweetness and moisture.
- Good Culture cottage cheese is recommended for creaminess, but any brand with similar thickness will work.
- Oats provide structure and fiber; old fashioned oats are best for texture.
- Honey can be substituted with maple syrup or agave nectar if desired.
- Store muffins in an airtight container for up to 3 days or freeze for longer storage.
