Description

These Moist Banana Cottage Cheese Muffins combine creamy cottage cheese with ripe bananas and wholesome oats for a nutritious, flavorful breakfast or snack option that’s naturally sweetened with honey and spiced with cinnamon.

Ingredients

Scale

Wet Ingredients

  • 1 cup cottage cheese (preferably Good Culture for thicker consistency)
  • 1 cup mashed banana (about 2 large very ripe spotted bananas)
  • 2 eggs
  • 1/3 cup honey
  • 2.5 tsp vanilla extract

Dry Ingredients

  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 cups Quaker Old Fashioned Oats
  • 1/4 tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or lining it with muffin liners.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, mashed bananas, eggs, honey, and vanilla extract. Stir until the mixture is well blended and smooth.
  3. Add Dry Ingredients: Add the baking powder, cinnamon, oats, and salt to the wet mixture. Mix thoroughly until all ingredients are incorporated and a thick batter forms.
  4. Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
  5. Bake Muffins: Place the muffin tin in the preheated oven and bake for approximately 25-30 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Remove muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Use very ripe bananas for maximum sweetness and moisture.
  • Good Culture cottage cheese is recommended for creaminess, but any brand with similar thickness will work.
  • Oats provide structure and fiber; old fashioned oats are best for texture.
  • Honey can be substituted with maple syrup or agave nectar if desired.
  • Store muffins in an airtight container for up to 3 days or freeze for longer storage.
