  • 2 tsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 garlic cloves, minced

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it reaches the right temperature while you prepare the chicken and toppings.
  2. Prepare Tomato and Basil Mixture: In a small to medium bowl, combine the sliced tomatoes and chopped basil leaves. Add 2 teaspoons of balsamic vinegar, 2 tablespoons of olive oil, 1 teaspoon of Italian seasoning, one minced garlic clove, and season with sea salt and freshly ground black pepper to taste. Toss everything gently until well combined, then set aside to allow flavors to meld.
  3. Season and Stuff the Chicken: Season both sides of each chicken breast with salt, pepper, and the remaining minced garlic clove. Using a sharp knife, carefully slice through the middle of each chicken breast to create a pocket, but be careful not to cut all the way through. Stuff each pocket with half a slice of fresh mozzarella cheese, then spoon in some of the tomato and basil mixture.
