Perfect for a quick yet elegant weeknight meal that combines rich Tuscan flavors with minimal cleanup.
Ingredients
Scale
Chicken
- 4 chicken breasts
- 1 tablespoon olive oil
Sauce
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup Parmesan cheese, grated
- 2 cups fresh spinach
Instructions
- Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté garlic and tomatoes: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Then add the cherry tomatoes and sun-dried tomatoes. Cook for 3-4 minutes until the tomatoes start to soften.
- Add cream, cheese, and spinach: Pour in the heavy cream and stir in the grated Parmesan cheese until melted and well combined. Add the fresh spinach and cook until it wilts into the sauce, about 2 minutes.
- Simmer the chicken: Return the browned chicken breasts to the skillet, nestling them into the creamy sauce. Reduce heat to low and simmer for 8-10 minutes or until the chicken is cooked through and the sauce has thickened slightly.
Notes
- For a thicker sauce, simmer a little longer or add a teaspoon of cornstarch mixed with water.
- Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
- You can substitute chicken thighs for a juicier result.
- Use fresh Parmesan for the best flavor and texture.
- Sun-dried tomatoes packed in oil can be used for more richness and flavor.
