Instructions

  1. Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. Sauté garlic and tomatoes: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Then add the cherry tomatoes and sun-dried tomatoes. Cook for 3-4 minutes until the tomatoes start to soften.

  4. Simmer the chicken: Return the browned chicken breasts to the skillet, nestling them into the creamy sauce. Reduce heat to low and simmer for 8-10 minutes or until the chicken is cooked through and the sauce has thickened slightly.
