This Potato and Green Bean Skillet recipe is a hearty and flavorful dish perfect for a quick weeknight meal. Tender baby potatoes are boiled and then sautéed with crispy bacon, caramelized onions, and green beans, all seasoned with everything bagel seasoning for a savory twist. - 1 yellow onion, diced
- 12 oz frozen cut green beans

- Salt and pepper to taste
Instructions
- Boil Potatoes: Slice the baby potatoes in half and place them in a large pot. Cover with water and add 1 teaspoon of salt. Cover the pot and bring the water to a boil over high heat. Once boiling, reduce heat to medium-high and continue boiling the potatoes until fork-tender, about 7-8 minutes. Drain the potatoes in a colander.
- Cook Bacon: While the potatoes boil, cook the chopped bacon in a large skillet over medium heat until it becomes brown and crispy. Once done, remove the bacon from the skillet but leave all or at least 2 tablespoons of bacon fat in the skillet for maximum flavor.
- Sauté Onions: Add the diced onion to the skillet with the bacon fat. Cook over medium heat until the onion is soft and slightly browned, stirring occasionally.
- Cook Potatoes in Skillet: Add the drained potatoes to the skillet with the sautéed onions. Stir briefly to coat the potatoes in the bacon fat. Allow them to cook undisturbed, stirring only every few minutes so the bottoms get browned and crispy.
- Add Green Beans: Once the potatoes have browned, add the frozen cut green beans directly into the skillet (no need to thaw). Continue cooking and stirring occasionally until the green beans are heated through.
- Add Bacon and Seasoning: Chop the previously cooked bacon and add it back into the skillet along with the everything bagel seasoning. Stir well to combine all ingredients. Taste and adjust seasoning by adding salt, pepper, or more bagel seasoning as desired. Serve hot and enjoy!

- Leaving some bacon fat in the skillet enhances flavor and aids in browning the potatoes and onions.
- You can substitute fresh green beans if preferred, but frozen works well and is convenient.
