Description

A simple and elegant dessert combining the natural sweetness of roasted grapes with creamy, whipped ricotta cheese, enhanced with vanilla and a touch of honey. Perfect for a light, refreshing treat or a sophisticated appetizer.

Ingredients

Scale

Roasted Grapes

  • 2 cups seedless grapes (red or green)
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon salt

Whipped Ricotta

  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar

Garnish

  • Fresh mint leaves (optional)

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare grapes: In a mixing bowl, toss the grapes with olive oil, honey, and salt until they are evenly coated. Spread the grapes out in a single layer on the prepared baking sheet to ensure even roasting.
  3. Roast grapes: Roast the grapes in the preheated oven for 20-25 minutes, or until they become soft and start to burst, releasing their natural juices. Remove from the oven and allow to cool slightly.
  4. Make whipped ricotta: While the grapes are roasting, combine the ricotta cheese, vanilla extract, and powdered sugar in a medium bowl. Use a hand mixer or whisk to whip the mixture until smooth and creamy, creating a light and fluffy texture.
  5. Assemble and serve: Spoon the whipped ricotta onto a serving plate or individual bowls. Top with the warm roasted grapes and drizzle any remaining juices from the baking sheet over the top for added flavor. Garnish with fresh mint leaves if desired for a pop of color and aroma.

Notes

  • Seedless grapes are preferred for ease of eating, but you can use grapes with seeds if desired.
  • For a dairy-free alternative, try whipped coconut cream instead of ricotta.
  • Adjust the amount of honey based on grape sweetness and personal preference.
  • Roasted grapes are also great served over yogurt, pancakes, or as a side to cheese plates.
  • Make sure to spread grapes in a single layer to promote even roasting and caramelization.
