Caramel and Topping

  • 2 bags (4.5 ounces each) Werther’s soft caramels, divided
  • 1/2 to 1 teaspoon sea salt

Main Mixture

  • 1 cup salted butter
  • 7 ½ cups mini marshmallows, divided
  • 7 cups Rice Krispies cereal


Instructions

  1. Prepare the Pan: Line a 9×13-inch baking pan with parchment paper and set aside. This will ensure the treats don’t stick and are easy to remove.
  2. Melt Majority of Caramels: Unwrap all the caramels. Set aside 10 caramels for later use. Place the remaining caramels in a medium microwave-safe bowl. Microwave in 30-second increments, stirring thoroughly after each, until melted and smooth. Set aside.
  3. Melt Butter and Combine with Marshmallows: In a large pot over medium heat, melt the butter. Once fully melted, remove the pot from heat and stir in 5 ½ cups of the mini marshmallows along with the melted caramel. Stir until mostly combined; it’s fine if the mixture is not entirely smooth at this point.
  4. Add Rice Krispies and Salt: Stir in the Rice Krispies cereal and 1/2 teaspoon sea salt. When the mixture is almost fully mixed, fold in the remaining mini marshmallows until evenly combined. Then transfer the mixture into the prepared pan, spreading it out evenly and gently pressing down to fit snugly.
  5. Drizzle Remaining Caramels and Add Salt: Melt the reserved 10 caramels in a microwave-safe bowl and drizzle over the top of the Rice Krispie treats in the pan. Optionally, sprinkle the remaining 1/2 teaspoon of sea salt evenly across the top for extra flavor.
  6. Cool and Serve: Allow the treats to cool completely. Using the edges of the parchment paper, gently lift the treats out of the pan. Cut into squares and serve.
