Description

Savory French Dip Tortilla Rollups are an easy and delicious beef appetizer featuring thinly sliced roast beef, Swiss cheese, and sautéed onions and bell peppers wrapped in large flour tortillas. Served with a warm, flavorful beef broth for dipping, these rollups are perfect for parties, game days, or casual gatherings.

Ingredients

Scale

Main Ingredients

  • 4 large flour tortillas
  • 8 oz thinly sliced roast beef
  • 4 slices Swiss cheese
  • 1 cup beef broth
  • 2 tablespoons horseradish sauce
  • 1 medium onion, thinly sliced
  • 1 medium bell pepper, thinly sliced
  • 2 tablespoons butter or oil (for toasting)
  • Optional: 1 teaspoon Worcestershire sauce (for broth)

Instructions

  1. Sauté Vegetables: In a skillet over medium heat, sauté thinly sliced onions and bell peppers until they become soft and caramelized, approximately 5-7 minutes. Once cooked, set them aside.
  2. Assemble Rollups: Lay one flour tortilla flat on a clean surface. Spread a thin layer of horseradish sauce evenly over the tortilla. Layer roast beef, sautéed onions, and bell peppers on top, then place a slice of Swiss cheese as the final layer.
  3. Roll Tortillas: Starting from one edge, tightly roll the tortilla around the filling, tucking in the sides to keep all ingredients enclosed. Repeat for all remaining tortillas.
  4. Toast Rollups: Heat butter or oil in the same skillet over medium heat. Place the rolled tortillas seam-side down and toast for 2-3 minutes per side or until golden brown and crispy.
  5. Heat Dipping Broth: In a small saucepan, warm the beef broth over medium heat until it just begins to simmer. For added depth of flavor, stir in Worcestershire sauce if desired.
  6. Serve: Slice each toasted rollup into bite-sized pieces and arrange on a platter with a small bowl of warm beef broth for dipping in the center.

Notes

  • You can substitute Swiss cheese with provolone or mozzarella if preferred.
  • For a spicier kick, add a little hot sauce to the horseradish spread.
  • These rollups can be prepared ahead of time and toasted just before serving.
  • Use low-sodium beef broth to reduce salt content.
  • Leftover rollups can be refrigerated and reheated in a skillet or oven.
