- Prepare Potatoes: In a large mixing bowl, combine the diced Yukon gold potatoes, 2 teaspoons of neutral oil, and the packet of Lipton onion soup mix. Toss well until the potatoes are fully coated.
- Bake Potatoes: Spread the coated potatoes in a single layer on a large rimmed baking sheet. Place the pan in the oven and bake for 20 minutes.
- Season Chicken: While the potatoes bake, season the boneless, skinless chicken breasts evenly with 2 to 3 teaspoons of chicken seasoning or rub. Set aside.
- Prepare Green Beans: In a separate large bowl, toss the rinsed and snapped green beans with 1 teaspoon of neutral oil and season with salt and pepper to your taste.
