- 14.5 oz (410 g) can diced tomatoes
- 1 medium bell pepper, diced
- 1 medium onion, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- 2 cups (480 ml) chicken broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Rice
- 1 cup (200 g) long-grain white rice
- 2 cups chicken broth or water (for cooking rice)
Instructions
- Prepare the rice: Bring 2 cups of chicken broth or water to a boil in a saucepan. Add 1 cup of long-grain white rice, reduce heat to low, cover, and let it simmer for 18-20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork.
- Sauté vegetables: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add diced onion, bell pepper, and celery, cooking for 5-7 minutes until the vegetables soften and become fragrant.
- Add garlic and seasoning: Stir in the minced garlic and 2 tablespoons of Cajun seasoning. Cook for an additional 1-2 minutes, allowing the spices and garlic to release their aroma.
- Combine liquids and simmer: Pour in the diced tomatoes, Worcestershire sauce, and 2 cups of chicken broth. Stir everything together thoroughly, making sure the mixture is well combined.
- Cook the shrimp: Add the peeled and deveined shrimp along with 2 bay leaves to the skillet. Simmer the mixture for 5-7 minutes until the shrimp turn pink and are cooked through. Season with salt and pepper according to your taste preferences.
- Serve: Remove the bay leaves. Spoon the shrimp creole over the cooked white rice and garnish with freshly chopped parsley. Serve hot and enjoy your flavorful meal.
