  • 1 10-ounce package frozen chopped spinach, defrosted and squeezed very dry

  • 1 sheet puff pastry, defrosted (preferably a butter-based brand like Dufour)


Instructions

  1. Prepare the egg wash: Whisk together the egg and water thoroughly and set aside for later use.
  2. Mix the filling: In a medium bowl, combine the crumbled feta, grated mozzarella, chopped green onion, garlic salt, and freshly grated nutmeg. Set this cheese mixture aside.
  3. Roll out the puff pastry: On a lightly floured surface, roll the defrosted puff pastry to flatten any seams and even out the thickness. Then brush the entire surface evenly with the prepared egg wash.
  4. Assemble the filling: Spread the cheese mixture evenly over the egg-washed puff pastry, then break apart the defrosted and well-drained spinach and spread it evenly over the cheese layer. Leave about an inch free of toppings on one of the short sides to make rolling easier.
  5. Roll the pastry: Starting from the short side covered with filling, carefully roll the pastry tightly like a jellyroll, ensuring the seam is sealed.
  6. Slice the roll: Line two baking sheets with parchment paper. Using a sharp knife, slice the rolled pastry into ½ to ¾ inch thick pinwheels, and arrange them spaced slightly apart on the prepared baking sheets.
  7. Chill before baking: Place the baking sheets with pinwheels into the refrigerator or freezer to chill while preheating the oven to 400°F (204°C).
  8. Bake the pinwheels: Lower the oven temperature to 350°F (177°C) and bake the pinwheels for 15 to 18 minutes, or until they turn golden brown and puffed up.
