Perfect for festive entertaining, this board combines vibrant colors, bold flavors, and fun shapes to wow your guests in just 30 minutes.

Ingredients

Scale

Meats

  • 12 slices Genoa Salami (Folded in half for roses)
  • 8 slices Peppered Salami (For a hint of spice)
  • 8 slices Sliced Corned Beef (Pastrami as alternative)

Cheeses

  • 8 ounces Irish Cheddar Cheese (Swap for any aged cheddar)
  • 8 ounces Kerrygold cheeses (Various types like Reserve and Dubliner)
  • 8 ounces Marble Cheese (Cut into clover shapes)

Vegetables & Fruits

  • 1 medium English cucumber (Can substitute with bell peppers)
  • 1 cup Broccoli florets (Cauliflower as alternative)
  • 10 stalks Asparagus (Snap peas or green beans as replacements)
  • 1 cup Snow peas (Optional)
  • 1 each Kiwi (Can swap with strawberries for garnish)

Condiments & Extras

  • 12 leaves Fresh sage (Can substitute with basil)
  • 1 cup Green olives (Any variety, pitted)
  • 2 cups Pretzels (Crackers can substitute)
  • 2 cups Rye and Wheat Crackers (Any crackers can be used)
  • 1/2 cup Spicy brown mustard (Alternative dips allowed)
  • 1/2 cup Thousand Island dressing (Alternative dips allowed)
  • 1 cup Sauerkraut (Can be omitted)

Instructions

  1. Preparation: Gather all ingredients and utensils needed. This includes slicing cheeses, washing and cutting vegetables, and readying the serving board or platter.
  2. Prepare Salami Roses: Take each slice of Genoa salami and fold it in half. Arrange multiple folded slices in overlapping lines, then carefully roll them tightly into rose shapes. Secure each rose with half slices of salami to hold the shape.
  3. Make Marble Cheese Clover: Using a 4-leaf clover shaped cutter, press out clover shapes from the marble cheese for a festive touch.
  4. Assemble the Board: Place small ramekins on your serving board for the sauces and dips. Arrange the salami roses and remaining meats in an aesthetic manner. Evenly distribute the different cheeses, placing the clover-shaped marble pieces prominently. Add the fresh vegetables, olives, and pretzels/crackers thoughtfully around the board.
  5. Garnish with Kiwi: Slice the kiwi and add it as a garnish on the board to provide a fresh, vibrant color contrast and tart flavor.
  6. Serve: Present the completed charcuterie board neatly, inviting guests to enjoy the beautiful presentation and diverse flavors.

Notes

  • Substitutions can be made based on availability such as pastrami for corned beef, or bell peppers for cucumber.
  • Snow peas can be omitted if not available without affecting the overall presentation.
  • The salami roses are a creative centerpiece and can be swapped with folded peppered salami for spice variation.
  • For a vegetarian version, replace meats with additional cheeses, nuts, and fresh vegetables.
  • Use a sharp cheese cutter or cookie cutter to create festive shapes to enhance visual appeal.
