Description

This Strawberry Chia Jam is a wholesome and naturally sweetened spread made without refined sugar. Using fresh or frozen strawberries, pure maple syrup, and nutrient-rich chia seeds, it offers a delightful fruity flavor with the benefit of added fiber and omega-3s. It’s easy to prepare on the stovetop and perfect for spreading on toast, topping oatmeal, or enhancing baked goods.

Ingredients

Scale

Ingredients

  • 450 g fresh strawberries (or frozen, see note 1)
  • 50 ml pure maple syrup
  • 1 tablespoon lemon juice (or lime juice)
  • 25 g chia seeds

Instructions

  1. Prepare Strawberries: If using fresh strawberries, wash them thoroughly, remove the stems, and hull them. Slice the strawberries into quarters to ensure even cooking.
  2. Simmer the Fruit: In a saucepan, combine the strawberries, pure maple syrup, and lemon juice. Place over medium-high heat and bring the mixture to a simmer. Once boiling and bubbling, reduce heat to medium and continue to simmer for 10-12 minutes, stirring frequently to prevent sticking and encourage breakdown of the strawberries.
  3. Add Chia Seeds: When the strawberries have softened and broken down into a jam-like consistency, turn off the heat. Whisk in the chia seeds thoroughly, ensuring they are evenly distributed to help thicken the jam.
  4. Cool the Jam: Remove the saucepan from heat and let the jam cool for 10-12 minutes. Stir intermittently during cooling to break up any chia seed lumps and achieve a smooth texture.
  5. Store and Chill: Transfer the jam to an airtight jar or container. Refrigerate for up to 2 weeks, during which the jam will continue to thicken. Alternatively, freeze in ice cube trays or containers for up to a couple of months; defrost overnight in the refrigerator before use.
  6. Serve: Enjoy the strawberry chia jam as you would any jam—spread on crusty bread or toast, spooned over oatmeal, served with pancakes or waffles, or used as a filling in cupcakes and cakes.

Notes

  • Frozen strawberries can be used if fresh are not available; no need to thaw before cooking.
  • The lemon or lime juice adds brightness and helps preserve the jam.
  • Maple syrup is used as a natural sweetener in place of refined sugar.
  • The amount of maple syrup can be adjusted based on your preferred sweetness.
  • Chia seeds absorb liquid and help the jam thicken without pectin or added gelatin.
  • For a chunkier jam, press some strawberries with the back of a spoon while simmering.
  • Store the jam in clean, airtight containers to maximize shelf life.
