This Strawberry Chia Jam is a wholesome and naturally sweetened spread made without refined sugar. Using fresh or frozen strawberries, pure maple syrup, and nutrient-rich chia seeds, it offers a delightful fruity flavor with the benefit of added fiber and omega-3s. It’s easy to prepare on the stovetop and perfect for spreading on toast, topping oatmeal, or enhancing baked goods.

- 450 g fresh strawberries (or frozen, see note 1)
- 50 ml pure maple syrup
- 1 tablespoon lemon juice (or lime juice)
- 25 g chia seeds
Instructions
- Prepare Strawberries: If using fresh strawberries, wash them thoroughly, remove the stems, and hull them. Slice the strawberries into quarters to ensure even cooking.
- Simmer the Fruit: In a saucepan, combine the strawberries, pure maple syrup, and lemon juice. Place over medium-high heat and bring the mixture to a simmer. Once boiling and bubbling, reduce heat to medium and continue to simmer for 10-12 minutes, stirring frequently to prevent sticking and encourage breakdown of the strawberries.
- Add Chia Seeds: When the strawberries have softened and broken down into a jam-like consistency, turn off the heat. Whisk in the chia seeds thoroughly, ensuring they are evenly distributed to help thicken the jam.
- Cool the Jam: Remove the saucepan from heat and let the jam cool for 10-12 minutes. Stir intermittently during cooling to break up any chia seed lumps and achieve a smooth texture.
- Store and Chill: Transfer the jam to an airtight jar or container. Refrigerate for up to 2 weeks, during which the jam will continue to thicken. Alternatively, freeze in ice cube trays or containers for up to a couple of months; defrost overnight in the refrigerator before use.
- Serve: Enjoy the strawberry chia jam as you would any jam—spread on crusty bread or toast, spooned over oatmeal, served with pancakes or waffles, or used as a filling in cupcakes and cakes.
