Instructions
- Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Wash and core the bell peppers, then slice them into rings about 1/2 inch thick. Set aside.
- Cook the Meat and Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes. Add the ground beef or turkey, breaking it up with a spoon, and cook until browned and fully cooked, about 7-8 minutes.
- Add Seasonings and Tomatoes: Stir in the Italian seasoning, salt, and pepper. Pour in the canned diced tomatoes (with their juice) and let the mixture simmer for about 5 minutes so the flavors meld and excess moisture reduces slightly.
- Combine with Rice: Remove the skillet from heat and stir in the cooked rice until fully incorporated with the meat mixture.
- Assemble the Casserole: Spread half of the meat and rice mixture in the bottom of a greased 9×13 inch casserole dish. Layer the sliced bell pepper rings over the mixture, then cover with the remaining meat and rice.
