Super Soft Roti is a classic Indian flatbread made with whole wheat flour, warm water, and a touch of oil or ghee, kneaded into a smooth dough and cooked on a hot skillet until perfectly puffed and golden. This recipe results in soft, pliable rotis ideal for scooping up curries, dals, and other flavorful dishes.

Instructions
- Mix Dry Ingredients: In a mixing bowl, combine the whole wheat flour and salt thoroughly to ensure even seasoning throughout the dough.
- Add Water Gradually: Gradually pour in the warm water while mixing the flour with your hand or a spoon until a soft dough begins to form. Add a little more water if necessary to reach the right consistency.
- Knead Dough: Add the oil and knead the dough on a clean surface for 8 to 10 minutes until it becomes smooth, elastic, and no longer sticky to touch.
- Rest the Dough: Cover the dough with a damp cloth or plastic wrap and let it rest at room temperature for 20 to 30 minutes to relax the gluten and make rolling easier.
- Divide and Roll: Divide the dough into 8 equal sized balls. Lightly flour a clean surface and roll each ball into a thin, even circle approximately 6 to 7 inches in diameter.
- Preheat Skillet: Heat a dry skillet or tava over medium heat until hot but not smoking to get the perfect cooking temperature.
- Cook Rotis: Place one rolled roti on the skillet and cook for about 30 seconds until bubbles start to form. Flip and cook the other side for another 30 seconds until light brown spots appear. Flip again and gently press with tongs to encourage puffing.
- Brush and Store: Remove cooked roti from the skillet, brush lightly with ghee or oil, then stack the rotis and cover them with a clean towel to keep warm and soft.
- Serve: Serve warm with your favorite curries, vegetables, or dals as a delicious and satisfying accompaniment.
